Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped mushrooms
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chopped fresh spinach
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350°F.
  2. Melt butter in a large skillet over medium heat.
  3. Add onion, mushrooms, garlic powder, salt and pepper. Cook for 5 minutes, stirring occasionally.
  4. Add spinach and cook for 2 minutes, stirring occasionally.
  5. Remove from heat and set aside.
  6. In a large bowl, whisk together eggs and milk.
  7. Add the cooked vegetables and shredded cheese and mix well.
  8. Pour into a greased 9x13-inch baking dish.
  9. Bake for 25 minutes, or until eggs are set and top is lightly golden.
