In a large bowl, combine the cabbage, pork, mushrooms, soy sauce, sesame oil, garlic, ginger, and sugar. Mix until everything is evenly combined.
Lay out a mondu wrapper on a flat surface. Scoop about 2 tablespoons of the filling into the center of the wrapper and fold in half, pressing the edges together to seal.
Repeat with the remaining wrappers and filling.
Heat a large skillet over medium-high heat and add a tablespoon of oil. Add the mondu to the pan in a single layer and cook for about 3 minutes, until the bottoms are golden brown. Flip over and cook for an additional 3 minutes.
Serve warm with your favorite dipping sauce.
