Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 cups cooked chicken, shredded
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (4 ounce) can diced green chilies
  • 1 (10 ounce) can enchilada sauce
  • 10 (6 inch) corn tortillas
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat oil in a large skillet over medium heat. Add garlic and onion and cook until softened, about 5 minutes. Stir in chicken, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes, stirring often.
  3. Remove from heat and stir in green chilies. Spread 1/2 cup enchilada sauce into the bottom of a 9x13 inch baking dish.
  4. Wrap tortillas in a damp paper towel and microwave for 30 seconds to soften. Spoon a heaping tablespoon of chicken mixture into each tortilla. Roll up tortillas and place seam side down in the prepared baking dish. Pour remaining enchilada sauce over the top of the rolled tortillas.
  5. In a small bowl, mix together sour cream and cheeses. Spread over the top of the enchiladas. Bake in preheated oven for 25 minutes, or until cheese is melted and bubbly.
