Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups long grain white rice
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas and carrots
  • 1 cup crumbled feta cheese

Directions

  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
  2. Add the rice and stir to combine. Cook for 2 minutes, stirring often.
  3. Add the vegetable broth, salt, and pepper. Bring to a boil, reduce heat to low, and cover. Simmer for 15 minutes.
  4. Stir in the peas and carrots and cook for an additional 5 minutes.
  5. Stir in the feta cheese and serve.
