Ingredients

  • 2 pounds of chicken thighs
  • 1/4 cup of soy sauce
  • 1/4 cup of fish sauce
  • 2 tablespoons of honey
  • 2 tablespoons of lime juice
  • 2 tablespoons of fresh ginger, minced
  • 2 tablespoons of garlic, minced
  • 1 teaspoon of red pepper flakes
  • 1/2 cup of bell pepper, diced
  • 1/2 cup of carrots, diced
  • 1/2 cup of zucchini, diced
  • 1/2 cup of onion, diced

Directions

  1. Preheat oven to 375F.
  2. In a medium-sized bowl, combine soy sauce, fish sauce, honey, lime juice, ginger, garlic, and red pepper flakes to make a marinade.
  3. Add chicken thighs to the marinade and let sit for 10 minutes.
  4. In a large baking dish, spread out chicken thighs and pour the excess marinade over the top.
  5. Add bell pepper, carrots, zucchini, and onion to the baking dish and mix everything together.
  6. Bake in preheated oven for 25-30 minutes until chicken is cooked through and vegetables are tender.
  7. Serve hot.
