Ingredients

  • 2 quarts water
  • 1/4 cup salt
  • 1/4 cup sugar
  • 1/2 cup white vinegar
  • 1 teaspoon mustard seed
  • 1 teaspoon coriander seed
  • 1 teaspoon black peppercorns
  • 2 cloves garlic, minced
  • 1 teaspoon dill seed
  • 2 tablespoons fresh dill, chopped
  • 3 pounds pickling cucumbers

Directions

  1. In a large pot, bring the water, salt, sugar, vinegar, mustard seed, coriander seed, peppercorns, and garlic to a boil.
  2. Reduce the heat and simmer for 10 minutes.
  3. Add the dill seed and chopped dill to the mixture and simmer for an additional 5 minutes.
  4. Remove the pot from the heat and allow the brine to cool to room temperature.
  5. Meanwhile, wash and dry the cucumbers, then cut them into 1/4-inch thick slices.
  6. Place the cucumber slices into a large glass container and pour the brine over them.
  7. Cover the container and refrigerate for at least 24 hours before serving.
