Ingredients

  • 1 cup butternut squash, pureed
  • 1 cup plain Greek yogurt
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup honey
  • 1/4 cup butter, melted
  • 2 eggs

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, mix together the butternut squash, yogurt, flour, baking powder, baking soda, salt, honey, butter, and eggs until well combined.
  3. Grease a 9x5-inch loaf pan and pour the batter into the pan.
  4. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow to cool before slicing.
