Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup matzo cake meal
  • 1/4 teaspoon salt
  • 1/4 cup cocoa powder

Directions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch springform pan with vegetable oil.
  2. In a medium bowl, beat together eggs and sugar with a hand mixer until light and fluffy.
  3. Add oil and vanilla extract and mix until combined.
  4. In a separate bowl, mix together matzo cake meal, salt, and cocoa powder.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Pour batter into prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool completely before serving.
