Ingredients

  • 1 lb of shrimp, peeled and deveined
  • 1 cup of cherry tomatoes, halved
  • 1 cup of zucchini, diced
  • 1 cup of bell peppers, diced
  • 1 cup of mushrooms, sliced
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tsp of red pepper flakes
  • 1/2 tsp of Italian seasoning
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the shrimp, garlic, red pepper flakes, and Italian seasoning. Cook, stirring occasionally, until the shrimp are cooked through, about 5 minutes.
  3. Add the tomatoes, zucchini, bell peppers, and mushrooms. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  4. Season with salt and pepper, to taste.
  5. Serve immediately.
