Ingredients
- 1 lb of shrimp, peeled and deveined
- 1 cup of cherry tomatoes, halved
- 1 cup of zucchini, diced
- 1 cup of bell peppers, diced
- 1 cup of mushrooms, sliced
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- 1 tsp of red pepper flakes
- 1/2 tsp of Italian seasoning
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the shrimp, garlic, red pepper flakes, and Italian seasoning. Cook, stirring occasionally, until the shrimp are cooked through, about 5 minutes.
- Add the tomatoes, zucchini, bell peppers, and mushrooms. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
- Season with salt and pepper, to taste.
- Serve immediately.
