Ingredients

  • 2 tablespoons butter
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 2 cups chicken broth
  • 3 cups corn kernels (fresh, frozen or canned)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups heavy cream
  • 1 cup shredded cooked crabmeat

Directions

  1. In a large saucepan, melt the butter over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the broth, corn, flour, thyme, salt, and pepper. Bring to a boil and reduce heat to low.
  4. Simmer for 10 minutes, stirring occasionally.
  5. Stir in the cream and crab and simmer for another 10 minutes.
  6. Serve hot.
