Ingredients

  • 3 large potatoes, peeled and sliced
  • 1 small onion, chopped
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup shredded cheddar cheese
  • 2 (9-inch) unbaked pie crusts

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook potatoes and onion in butter until potatoes are tender. Stir in flour, salt, pepper, and thyme. Gradually stir in chicken broth and parsley. Cook and stir until thickened and bubbly. Remove from heat.
  3. Stir in cheese. Place one crust in a 9-inch pie plate. Pour potato mixture into crust. Cover with top crust and press edges together to seal.
  4. Bake in preheated oven for 25 to 30 minutes, or until crust is golden brown.
