Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 head cauliflower, cut into florets
  • 1/2 head broccoli, cut into florets
  • 1/2 red bell pepper, cut into strips
  • 1/2 green bell pepper, cut into strips
  • 1/2 onion, cut into wedges
  • 1/4 cup pitted Kalamata olives

Directions

  1. Preheat oven to 375°F.
  2. In a small bowl, mix together olive oil, garlic, cumin, coriander, paprika, turmeric, oregano, parsley, salt, and pepper until well combined.
  3. In a large bowl, combine cauliflower, broccoli, bell peppers, onion, and olives. Pour spice mixture over vegetables and mix together until vegetables are evenly coated.
  4. Spread vegetables in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 20 minutes, stirring halfway through.
  6. Serve and enjoy!
