Ingredients
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 4 ounces beef (skirt steak, sirloin, or chuck roast), thinly sliced
- 2 cups mushrooms, thinly sliced
- 1 cup carrots, julienned
- 1 cup spinach, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 7 ounces glass noodles (also known as sweet potato or cellophane noodles)
Directions
- In a large skillet or wok, heat oil over medium-high heat. Add garlic and beef and cook for 2 minutes, stirring often.
- Add mushrooms, carrots, and spinach and cook for 3 minutes more, stirring often.
- Add soy sauce, sesame oil, sugar, and black pepper and stir to combine.
- Add glass noodles and stir to combine. Cook for 3 minutes more, stirring often.
- Serve warm.
