Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 4 ounces beef (skirt steak, sirloin, or chuck roast), thinly sliced
  • 2 cups mushrooms, thinly sliced
  • 1 cup carrots, julienned
  • 1 cup spinach, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 7 ounces glass noodles (also known as sweet potato or cellophane noodles)

Directions

  1. In a large skillet or wok, heat oil over medium-high heat. Add garlic and beef and cook for 2 minutes, stirring often.
  2. Add mushrooms, carrots, and spinach and cook for 3 minutes more, stirring often.
  3. Add soy sauce, sesame oil, sugar, and black pepper and stir to combine.
  4. Add glass noodles and stir to combine. Cook for 3 minutes more, stirring often.
  5. Serve warm.
