Ingredients
- 1/2 cup butter, softened
- 1 1/2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon peppermint extract
- 1/4 cup creme de menthe liqueur
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla, peppermint extract, and creme de menthe liqueur. Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk.
- Stir in the chocolate chips and walnuts (if using). Spread batter into the prepared pan.
- Bake for 30 to 35 minutes in the preheated oven. Cake is done when it springs back to the touch. Cool before frosting.
