Ingredients

  • 1 head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh lemon juice

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine cauliflower, olive oil, garlic, oregano, basil, salt, and pepper.
  3. Spread cauliflower onto a baking sheet in a single layer.
  4. Bake for 25-30 minutes, or until cauliflower is tender and golden brown.
  5. In a small bowl, combine parsley and lemon juice.
  6. Remove cauliflower from oven and transfer to a serving dish.
  7. Pour parsley and lemon juice mixture over cauliflower and stir to combine.
  8. Serve warm.
