Ingredients

  • 1 cup steel-cut oats

  • 1 teaspoon olive oil

  • 1/4 cup shredded cheese

Directions

  1. In a medium saucepan, bring the oats, water, oil, and salt to a boil.
  2. Reduce heat to low and simmer, stirring occasionally, until oats are cooked through and creamy, about 10 minutes.
  3. Stir in the salsa, cheese, cilantro, onion, jalapeño, and black beans.
  4. Cook for an additional 2 minutes, stirring occasionally.
