Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Italian seasoning blend
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 small red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/4 cup diced red bell pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning blend
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat your grill to high heat.
  2. In a medium bowl, combine the shrimp, 3 tablespoons olive oil, lemon juice, 1 teaspoon Italian seasoning blend, sea salt, and black pepper.
  3. Toss to coat and let marinate for 10 minutes.
