Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 onion, chopped

  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

  1. In a large pot, heat some oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove from the pot and set aside.
  2. In the same pot, add the onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes. Add the garlic, cumin, paprika, cayenne pepper, and chili powder. Stir to combine.
  3. Add the chicken broth, diced tomatoes, black beans, and corn to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Shred the cooked chicken and add it back to the pot. Season with salt and pepper to taste.
