Old-Time Mincemeat Pie
Ingredients
1/2 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1 cup finely chopped walnuts
Additional powdered sugar for rolling
Directions
In a medium-size bowl, cream together butter and 1/2 cup powdered sugar.
Add vanilla extract and mix until combined.
In a separate bowl, sift together flour and salt.
Gradually add flour mixture to the butter mixture and mix until fully incorporated.
Add walnuts and mix until combined.
Using a tablespoon, scoop out dough and roll into 1-inch balls.
Place balls onto a parchment-lined baking sheet.
Chill for at least 1 hour.
Preheat oven to 350°F.
Roll balls in powdered sugar again.
Bake for 12-15 minutes.
Let cookies cool on baking sheet for 5 minutes before transferring to a cooling rack.
