Ingredients

  • 1 pound marlin filet, skinless and boneless
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup lemon juice
  • 1/4 cup white wine
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat a grill to medium-high heat.
  2. In a large bowl, combine the olive oil, salt, pepper, oregano, garlic powder, paprika and red pepper flakes.
  3. Add the marlin filet to the bowl and coat it with the oil mixture.
  4. Place the marlin directly on the grill and cook for 5 minutes per side, or until the fish is cooked through.
  5. Remove the marlin from the grill and place it on a serving platter.
  6. In a small bowl, whisk together the lemon juice, white wine, and parsley.
  7. Pour the lemon mixture over the marlin filet and serve.
