Ingredients

  • 1 ½ lbs. wild salmon, cut into portions
  • ½ cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons tequila
  • 2 tablespoons orange juice
  • 2 tablespoons honey
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • 1 cup crushed tortilla chips

Directions

  1. In a medium bowl, mix together the lime juice, olive oil, tequila, orange juice, honey, sugar, salt, pepper, cumin, and chili powder.
  2. Pour the marinade over the salmon and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat the oven to 375 degrees F.
  4. Remove the salmon from the marinade and place it on a greased baking sheet.
  5. Sprinkle the crushed tortilla chips over the salmon.
  6. Bake in the preheated oven for 12 to 15 minutes, or until the salmon is cooked through.
  7. Garnish with lime wedges and serve.
