Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually stir the dry ingredients into the wet ingredients until just blended.
  5. Stir in the oats until incorporated.
  6. Drop by rounded spoonfuls onto ungreased baking sheets.
  7. Bake for 8 to 10 minutes in the preheated oven, or until the edges are golden.
  8. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
