- 1 pound shrimp, peeled and deveined

Directions
- In a medium bowl, combine the shrimp, olive oil, garlic, ginger, red pepper flakes, and soy sauce. Mix until everything is evenly distributed.
- Heat a large skillet over medium-high heat. Add the shrimp mixture and cook for 4-5 minutes, stirring occasionally, until the shrimp is cooked through.
- Remove the shrimp from the heat and place in a large bowl. Add the cilantro, mint, peanuts, scallions, carrots, rice noodles, sesame oil, and rice vinegar. Gently toss the ingredients together until everything is evenly distributed.
- Serve the salad immediately or chill for later.
