Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons soy sauce
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup peanuts, chopped
  • 1/2 cup scallions, chopped
  • 1/2 cup carrots, shredded
  • 4 ounces rice noodles, cooked according to package instructions
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar

Directions

  1. In a medium bowl, combine the shrimp, olive oil, garlic, ginger, red pepper flakes, and soy sauce. Mix until everything is evenly distributed.
  2. Heat a large skillet over medium-high heat. Add the shrimp mixture and cook for 4-5 minutes, stirring occasionally, until the shrimp is cooked through.
  3. Remove the shrimp from the heat and place in a large bowl. Add the cilantro, mint, peanuts, scallions, carrots, rice noodles, sesame oil, and rice vinegar. Gently toss the ingredients together until everything is evenly distributed.
  4. Serve the salad immediately or chill for later.
