Ingredients
- 1 tablespoon peanut oil
- 2 cloves garlic, chopped
- 1/2 red onion, chopped
- 1/2 inch fresh ginger, grated
- 2 skinless, boneless chicken breasts, cut into strips
- 1/2 cup unsalted peanuts
- 1/4 cup sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 cups sliced mushrooms
- 2 tablespoons chopped fresh cilantro
- 1/4 cup chopped fresh basil leaves
Directions
- Heat the peanut oil in a wok or large skillet over medium heat.
- Add the garlic, onion, and ginger and cook, stirring constantly, for 2 minutes.
- Add the chicken and cook, stirring, for 5 minutes, or until the chicken is cooked through.
- Add the peanuts, sesame oil, soy sauce, and fish sauce and stir to combine.
- Add the mushrooms and cook, stirring occasionally, for 5 minutes, or until the mushrooms are cooked through.
- Add the cilantro and basil and stir to combine.
- Serve over hot cooked rice.
