Ingredients

  • 1 teaspoon cumin seeds
  • 2 tablespoons oil
  • 2 cloves garlic, chopped
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1 pound fresh okra, trimmed and sliced
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the cumin seeds and cook for 1-2 minutes, stirring constantly.
  3. Add the garlic and ginger and cook for 1 minute, stirring constantly.
  4. Add the coriander, cumin, turmeric, chili powder, garam masala and salt and cook for 1 minute, stirring constantly.
  5. Add the okra and cook for 5-7 minutes, stirring occasionally, until the okra is tender and lightly browned.
  6. Stir in the cilantro and cook for 1 minute.
  7. Serve hot.
