Ingredients

  • 1 whole chicken (4-5 lbs)
  • 2 lemons, quartered
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400 degrees F.
  2. Wash and pat the chicken dry with paper towels.
  3. Place the chicken in a roasting pan.
  4. Rub the chicken with the olive oil.
  5. In a small bowl, mix together the garlic powder, paprika, oregano, salt, and pepper. Sprinkle the mixture over the chicken.
  6. Place the lemon quarters and rosemary inside the cavity of the chicken.
  7. Roast the chicken for 40-45 minutes, or until the internal temperature reaches 165 degrees F.
  8. Remove the chicken from the oven and let rest for 10 minutes before carving.
