Ingredients
- 4 sweet potatoes, peeled and cut into cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder

- Salt and pepper, to taste
- 1 cup baby rocket leaves
- 1 lemon, juiced
- 1/4 cup feta cheese, crumbled
Directions
- Preheat the oven to 200°C/400°F.
- In a large bowl, combine the sweet potatoes with the olive oil, garlic powder, oregano, salt and pepper. Mix until the sweet potatoes are evenly coated.
- Spread the sweet potato cubes onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until the sweet potatoes are tender and golden brown.
- In a large salad bowl, combine the rocket leaves, lemon juice and feta cheese.
- Add the roasted sweet potatoes to the salad and gently mix until combined.
