Moroccan Lamb with Shiraz Honey Sauce

Ingredients

  • 1 kg of diced lamb
  • 2 onions, chopped
  • 4 cloves of garlic, crushed
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • 2 teaspoons of ground ginger
  • 1 teaspoon of cinnamon
  • 1 teaspoon of turmeric
  • 1 teaspoon of black pepper
  • 2 tablespoons of tomato paste
  • 1 cup of red wine
  • 1 cup of beef stock
  • 1/2 cup of honey
  • 1/2 cup of Shiraz

Directions

  1. In a large pot, heat some oil over medium-high heat and add the diced lamb. Cook for about 5 minutes until the lamb is browned.
  2. Add the onion and garlic and cook for another 3 minutes.
  3. Add the cumin, paprika, ginger, cinnamon, turmeric and black pepper and cook for another 2 minutes.
  4. Add the tomato paste, red wine, beef stock, honey and Shiraz and stir to combine.
  5. Bring to a boil, then reduce the heat and let simmer for 30 minutes.
  6. Serve with some cooked rice or couscous.
