Ingredients

  • 1 cup cooked wild rice
  • 1/2 cup cooked polenta
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh oregano
  • 1/4 cup chopped fresh thyme
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1/4 cup bread crumbs
  • 1/4 cup chopped walnuts

Directions

  1. In a large bowl, combine the cooked wild rice, cooked polenta, Parmesan cheese, parsley, basil, oregano, thyme, garlic, salt, and pepper.
  2. Mix together until everything is well combined.
  3. Form the mixture into 8 equal-sized patties.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the patties to the skillet and cook for 5-7 minutes, flipping once halfway through.
  6. Remove the burgers from the skillet and let them cool for a few minutes.
  7. In a small bowl, combine the bread crumbs and walnuts.
  8. Coat the burgers with the bread crumb mixture.
  9. Return the burgers to the skillet and cook for an additional 5 minutes, flipping once, until the burgers are golden brown and crispy.
