Ingredients
- 1 head cauliflower, cut into florets
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup grated Gruyere cheese
- 1/4 cup freshly grated Parmesan cheese
- 1 tablespoon truffle oil
Directions
- Preheat oven to 375°F (190°C).
- Melt butter in a large saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
- Whisk in the milk, salt, and pepper. Increase the heat to medium-high and bring the mixture to a boil, stirring constantly.
- Reduce the heat to low and simmer for 3 minutes, stirring occasionally.
- Remove from the heat and stir in the Gruyere and Parmesan cheese.
- Add the cauliflower to a 9x13-inch baking dish. Pour the cheese sauce over the top and stir to combine.
- Drizzle the truffle oil over the top and stir to combine.
- Bake for 30 minutes, or until the top is golden brown and the cauliflower is tender.
- Remove from the oven and let cool for 10 minutes before serving.
