Ingredients

  • 1 head cauliflower, cut into florets
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup grated Gruyere cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon truffle oil

Directions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a large saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.
  3. Whisk in the milk, salt, and pepper. Increase the heat to medium-high and bring the mixture to a boil, stirring constantly.
  4. Reduce the heat to low and simmer for 3 minutes, stirring occasionally.
  5. Remove from the heat and stir in the Gruyere and Parmesan cheese.
  6. Add the cauliflower to a 9x13-inch baking dish. Pour the cheese sauce over the top and stir to combine.
  7. Drizzle the truffle oil over the top and stir to combine.
  8. Bake for 30 minutes, or until the top is golden brown and the cauliflower is tender.
  9. Remove from the oven and let cool for 10 minutes before serving.
