Ingredients
- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 bay leaf
- 2 large carrots, peeled and diced
- 2 large potatoes, peeled and diced
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley, for serving (optional)
Directions
- In a large bowl, toss the beef cubes with the flour to coat. In a large pressure cooker, heat the olive oil over medium heat.
- Add the beef cubes and cook, stirring occasionally, until the beef is browned, about 5 minutes.
- Add the onion and garlic and cook, stirring often, until the vegetables are softened, about 3 minutes.
- Add the beef broth, tomato paste, Worcestershire sauce, thyme, oregano, rosemary, and bay leaf and stir to combine.
- Add the carrots and potatoes and season with salt and pepper, to taste.
- Secure the lid on the pressure cooker, increase the heat to high, and bring to high pressure. Reduce the heat to low and cook for 15 minutes.
- Release the pressure and remove the lid. Taste and adjust the seasoning as needed. Serve hot, garnished with fresh parsley, if desired.
