Ingredients
1 tablespoon olive oil
1 small onion, chopped
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
1 (14.5-ounce) can diced tomatoes, undrained
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
1 (8-ounce) package shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 pound spaghetti
Directions
Heat olive oil in a medium saucepan over medium heat.
Add onion and garlic, and cook until onion is translucent, about 5 minutes.
Stir in oregano, red pepper flakes, diced tomatoes, salt, and black pepper. Simmer for 10 minutes.
Stir in parsley and remove from heat.
Preheat oven to 350°F (175°C).
Spread half of the marinara sauce in the bottom of an 8-inch square baking dish.
Layer half of the spaghetti on top. Sprinkle with half of the mozzarella cheese and half of the Parmesan cheese.
Repeat layers with remaining spaghetti, mozzarella cheese, and Parmesan cheese.
Pour remaining marinara sauce over the top and spread evenly.
Bake for 25 minutes, or until cheese is melted and bubbly.
