Ingredients

  • 2 cups carrots, peeled and cut into 1-inch pieces
  • 2 cups cauliflower florets
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine carrots, cauliflower, olive oil, thyme, salt and pepper.
  3. Toss to coat vegetables with oil and seasonings.
  4. Transfer vegetables to a large baking sheet and spread into an even layer.
  5. Bake for 25-30 minutes, stirring once or twice during cooking, until vegetables are tender and lightly browned.
