Ingredients
4 slices rye bread
1 tablespoon butter
4 slices smoked turkey
1/2 cup sauerkraut, rinsed and drained
2 slices Swiss cheese
1/4 cup thousand island dressing
Directions
Preheat a skillet over medium heat.
Spread butter onto one side of each slice of bread.
Place two slices of bread, butter side down, onto the heated skillet.
Top each slice of bread with a slice of cheese, followed by a slice of turkey and a heaping tablespoon of sauerkraut.
Spread thousand island dressing onto the remaining two slices of bread, then place each slice on top of one of the sandwiches.
Cook the sandwiches for 4-5 minutes per side, or until the cheese is melted and the bread is golden brown.
Serve warm!

The classic Reuben is made with corned beef, but turkey is a great alternative for a healthier version.
