Ingredients

  • 1 cup sugar
  • 3 cups sweetened shredded coconut
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 4 eggs, lightly beaten
  • 1/4 cup butter, melted
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch (23x33-cm) baking dish.
  2. In a medium bowl, combine sugar, coconut, cornstarch, cinnamon, and salt. Mix well.
  3. In a separate bowl, whisk together milk, eggs, and melted butter.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. In a small bowl, combine flour and baking powder. Add to the coconut mixture and mix until combined.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 30-35 minutes, or until the top is golden brown and the center is set.
