Ingredients

  • 1/2 cup chickpeas (drained and rinsed)
  • 1/2 cup cocoa powder
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a food processor, blend together the chickpeas, cocoa powder, honey, coconut oil, eggs, baking powder, salt and vanilla extract.
  3. Pour the batter into a greased cupcake tin.
  4. Sprinkle the chocolate chips over the batter.
  5. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cupcakes to cool before serving.
