Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can white beans, drained and rinsed
  • 1/2 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces rotini pasta

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  2. Add the garlic, oregano, basil, and red pepper flakes and cook for another minute.
  3. Add the tomatoes, white beans, vegetable broth, salt, and pepper and bring to a simmer. Simmer for 10 minutes.
  4. While the sauce is simmering, cook the rotini according to package directions.
  5. When the sauce is done simmering, add the cooked rotini and stir to combine.
  6. Serve hot.
