Ingredients
1 tablespoon olive oil
1 yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 teaspoon dried oregano

1 (15 ounce) can white beans, drained and rinsed

Directions
Heat the oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the garlic, oregano, basil, and red pepper flakes and cook for another minute.
Add the tomatoes, white beans, vegetable broth, salt, and pepper and bring to a simmer. Simmer for 10 minutes.
While the sauce is simmering, cook the rotini according to package directions.
When the sauce is done simmering, add the cooked rotini and stir to combine.
Serve hot.

Rotini is a type of pasta that is shaped like a corkscrew.
White beans are an excellent source of fiber and protein.
This dish can be easily made vegan by omitting the cheese.
