Ingredients

  • 2 flour tortillas
  • 2 eggs, beaten
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
    • Directions

      1. Heat a skillet over medium-high heat.
      2. Place one tortilla in the skillet and spread the beaten eggs over the top. Sprinkle the cheese over the eggs and season with salt and pepper.
      3. Place the second tortilla on top and cook for 3-4 minutes, until the bottom is golden brown.
      4. Flip the quesadilla and cook for an additional 3-4 minutes, until the other side is golden brown.
      5. Remove from heat and serve warm.
