Ingredients
- 1 lb of your favorite pasta
- 4 green tomatoes, diced
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
Directions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute.
- Add the diced tomatoes to the skillet and season with salt and pepper. Cook for 3-4 minutes until the tomatoes are tender.
- Add the cooked pasta to the skillet and toss to combine. Cook for 2-3 minutes until the pasta is warmed through.
- Add the basil and Parmesan cheese and toss to combine. Serve warm.
