Ingredients
- 2 tablespoons olive oil
- 1 pound pork, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) hominy, drained and rinsed
- 1 can (4 ounces) diced jalapeños
- 4 cups chicken stock
Directions
- Heat the olive oil in a large pot over medium heat. Add the pork and cook until lightly browned, about 5 minutes.
- Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Add the cumin, chili powder, oregano, salt and pepper. Cook for 1 minute.
- Add the tomatoes, hominy, jalapeños and chicken stock. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
- Serve hot.
