Ingredients
2 tablespoons olive oil
1 pound pork, cubed
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (14.5 ounces) diced tomatoes
1 can (15 ounces) hominy, drained and rinsed
1 can (4 ounces) diced jalapeños
4 cups chicken stock
Directions
Heat the olive oil in a large pot over medium heat. Add the pork and cook until lightly browned, about 5 minutes.
Add the onion and garlic and cook until the onion is softened, about 5 minutes.
Add the cumin, chili powder, oregano, salt and pepper. Cook for 1 minute.
Add the tomatoes, hominy, jalapeños and chicken stock. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
Serve hot.
