Ingredients
- 1 cup quinoa
- 1 cup vegetable or chicken broth
- 1 can chickpeas, drained and rinsed
- 1/2 cup diced red onion
- 1/2 cup diced red pepper
- 1/2 cup diced cucumber
- 1/4 cup Kalamata olives, chopped
- 3 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions
- In a medium saucepan, bring the broth to a boil. Add the quinoa, reduce the heat to low, and cover. Simmer for 15 minutes, or until the quinoa is cooked through.
- In a large bowl, combine the cooked quinoa, chickpeas, red onion, red pepper, cucumber, and olives. In a small bowl, whisk together the lemon juice, olive oil, garlic, oregano, salt, and pepper. Pour the dressing over the quinoa mixture and stir to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
