Ingredients

  • 1 lb asparagus spears, trimmed and cut into 1-inch pieces
  • 2 yellow peppers, seeded and diced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced fresh parsley

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine asparagus and yellow pepper. Add olive oil, salt, and pepper and toss to coat.
  3. Spread vegetables in a single layer on a baking sheet. Roast for 10 minutes or until vegetables are tender.
  4. Transfer vegetables to a serving bowl. Add lemon juice and parsley and toss to combine.
  5. Serve warm or at room temperature.
