Ingredients
- 1 lb asparagus spears, trimmed and cut into 1-inch pieces
- 2 yellow peppers, seeded and diced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced fresh parsley
Directions
- Preheat oven to 400 degrees F.
- In a large bowl, combine asparagus and yellow pepper. Add olive oil, salt, and pepper and toss to coat.
- Spread vegetables in a single layer on a baking sheet. Roast for 10 minutes or until vegetables are tender.
- Transfer vegetables to a serving bowl. Add lemon juice and parsley and toss to combine.
- Serve warm or at room temperature.
