In a large skillet over medium heat, cook the chorizo until it is cooked through, about 5-7 minutes.
Add the potatoes, onion, garlic, cumin, chili powder, oregano, salt and pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.
Warm the tortillas in a dry skillet over medium heat, about 1-2 minutes per side.
Divide the chorizo and potato mixture among the four tortillas. Top with cheese, sour cream and salsa, if desired.
Fold the sides of the tortillas in and roll them up into burritos.
Serve with additional toppings, if desired.
