In a large skillet over medium heat, cook the sausage until browned and crumbly. Drain fat and transfer sausage to a plate.
In a medium bowl, combine the cooked sausage, cheddar cheese, mozzarella cheese, parsley, chives, garlic, salt, pepper, oregano, and thyme. Mix until combined.
On a lightly floured surface, roll out each puff pastry sheet into a 12x12-inch square. Cut each square into four 6-inch squares. Place 1/4 cup of the sausage mixture in the center of each square.
Fold each square in half and press the edges together to seal. Place turnovers on a large baking sheet.
