Ingredients

  • 1 pre-made 9-inch pie crust
  • 3 cups fresh or frozen raspberries
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons unsalted butter

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium saucepan, combine raspberries, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until mixture thickens and boils. Reduce heat and simmer for 1 minute.
  3. Remove from heat and stir in lemon juice and butter. Pour into the prepared pie crust.
  4. Bake in preheated oven for 35 minutes, or until crust is golden and filling is bubbly.
  5. Let cool before serving.
