Ingredients

  • 3 ripe bananas, mashed
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup chopped walnuts
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan.
  2. In a large bowl, combine mashed bananas, oil, sugar, eggs, and vanilla. Beat until thoroughly combined.
  3. In a separate bowl, mix together flour, baking soda, salt, and 1 teaspoon of cinnamon. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. In a small bowl, combine walnuts, brown sugar, 1 teaspoon of cinnamon, and melted butter. Mix until crumbly.
  5. Fill each muffin cup with batter and top with crumb mixture.
  6. Bake in preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow to cool before serving.
