Ingredients

  • 2 cloves garlic, peeled and minced
  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice

Directions

  1. In a food processor, combine the garlic, egg yolk, mustard, salt, pepper, and cayenne pepper (if using). Pulse until the garlic is finely chopped.
  2. With the food processor running, slowly pour in the olive oil in a steady stream. The mixture will emulsify and thicken as the oil is added.
  3. Add the lemon juice and pulse to combine.
  4. Transfer the aioli to a bowl and serve immediately, or store in an airtight container in the refrigerator for up to 1 week.
