Ingredients

  • 1 9-inch pre-made pie crust
  • 1/2 cup pesto
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 4 eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Spread the pesto onto the bottom of the pre-made pie crust.
  3. Sprinkle the goat cheese and sun-dried tomatoes over the pesto.
  4. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the goat cheese and sun-dried tomatoes.
  6. Bake for 30-35 minutes, or until the center is set.
  7. Let cool for 10 minutes before slicing and serving.
