Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1/2 cup granulated sugar
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons freshly grated orange zest
  • 2 tablespoons freshly grated lemon zest
  • 2 tablespoons freshly grated lime zest
  • 1 teaspoon vanilla extract
  • Additional sugar for rolling

Directions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the flour, salt, orange zest, lemon zest, lime zest, and vanilla extract and mix until combined.
  3. Roll the dough into 1-inch balls and place on the prepared baking sheets. Flatten slightly with the palm of your hand. Sprinkle with additional sugar.
  4. Bake for 15 minutes, or until lightly golden brown. Let cool for 5 minutes before transferring to a wire rack to cool completely.
