Ingredients
2-3 cups grated yellow squash
1/4 cup chopped onion
1/4 cup chopped fresh herbs (such as parsley, chives, and/or basil)

Oil, for frying
Directions
In a large bowl, combine the grated yellow squash, onion, herbs, breadcrumbs, cheese, egg, and salt and pepper. Mix until evenly combined.
Shape the mixture into patties, about 1/4-inch thick.
Heat the oil in a large skillet over medium heat. Fry the patties for about 2-3 minutes per side, or until golden brown and cooked through.
Serve hot with your favorite side dishes.

Yellow squash is a type of summer squash that is available from July to September.
It is high in vitamin A and is a good source of dietary fiber.
These patties can also be made with other types of summer squash, such as zucchini or crookneck squash.
