Ingredients

  • 2-3 cups grated yellow squash
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh herbs (such as parsley, chives, and/or basil)
  • 1/2 cup breadcrumbs
  • 1/2 cup grated cheese (such as Parmesan or Cheddar)
  • 1 egg, lightly beaten
  • Salt and pepper, to taste
  • Oil, for frying

Directions

  1. In a large bowl, combine the grated yellow squash, onion, herbs, breadcrumbs, cheese, egg, and salt and pepper. Mix until evenly combined.
  2. Shape the mixture into patties, about 1/4-inch thick.
  3. Heat the oil in a large skillet over medium heat. Fry the patties for about 2-3 minutes per side, or until golden brown and cooked through.
  4. Serve hot with your favorite side dishes.
